Cilantro Lime Quinoa with Black Beans

INGREDIENTS

  • 1 cup Quinoa
  • 2 cups Water
  • 1 tsp Lime Zest
  • 1/4 cup Lime Juice
  • 3 tbsps Cilantro
  • 2 cups Black Beans (Low Sodium, Cooked)

DIRECTIONS

  1. Place a medium-sized pot over high heat. Bring water and quinoa to a boil. Cover and reduce heat to low and simmer for 15 minutes or until all of the water is gone.
  2. Remove the quinoa from the heat and let stand for 5 minutes. Fluff quinoa with a fork.
  3. Add lime zest, juice, roasted garlic and black beans. Toss all of the ingredients together. Add the chopped cilantro and serve.

Citrus Chipotle Marinated Chicken

INGREDIENTS

  • 1 lb Chicken Breast
  • 1/4 cup Chipotle In Adobo
  • 1/4 cup Raw Honey
  • 1/2 cup Lime Juice
  • 1 tbsp Lime Zest
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 2 pieces Garlic (Minced)
  • 1/4 cup Cilantro
  • 1/8 tsp Sea Salt & Black Pepper
  • 1/4 cup Extra Virgin Olive Oil

DIRECTIONS

  1. Place all of the ingredients except the chicken in a large mixing bowl. Stir the ingredients until everything is mixed well. Add the chicken breasts to the marinade and cover. Marinate the chicken for a minimum of 1-2 hours.
  2. Pre-heat a grill to 425 degrees. Remove the chicken from the marinade and wipe off any excess marinade. Place the chicken on the grill and cook on either side for 5-6 minutes or until fully cooked. Enjoy!

Cilantro Lime Ranch Dressing

INGREDIENTS

  • 3/4 cup Mayonnaise
  • 3/4 cup Plain Greek Yogurt
  • 2 tbsps Lime Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1/3 cup Nonfat Milk
  • 2 tbsps Chives
  • 1/2 cup Cilantro
  • 2 pieces Garlic (Minced)
  • 1/4 tsp Sea Salt & Black Pepper

DIRECTIONS

  1. Place all ingredients into a blender or food processor and blend until smooth. Enjoy!

Mango Salsa

INGREDIENTS

  • 1 Mango (diced small)
  • 1 stalk Green Onion (sliced thin)
  • 1 Jalapeno Pepper (diced small, seeds removed)
  • 1/2 cup Red Onion (diced small)
  • 1/4 cup Lime Juice
  • 2 tbsps Lemon Juice
  • 1/2 cup Cilantro (chopped)
  • 1/4 tsp Sea Salt
  • 1/2 tsp Black Pepper

DIRECTIONS

  1. Combine all of the ingredients in a bowl, mix well and allow the salsa to sit, approximately 10-15 minutes.
