Strawberry & Spinach Salad with Feta

1/4 cup Extra Virgin Olive Oil

1 1/2 tbsps Balsamic Vinegar

2 tsps Shallot (finely chopped)

7 cups Baby Spinach

1 1/2 cups Strawberries (sliced)

1/2 cup Feta Cheese

1/2 cup Walnuts (lightly toasted)


1. Whisk first three ingredients together for dressing. Add salt and pepper to taste.

2. Combine and toss all ingredients in a large bowl to serve.


  • For Lunch Meal Prep: Place roughly 1 1/2 cups spinach, 1/3 cup strawberries, and 2 tablespoons each of feta and walnuts into Tupperware containers. Add dressing just prior to serving.

  • For Added Protein: Can also add 3-5 oz grilled chicken for a more filling meal.
