Pecan Crusted Salmon
- 20 ozs Salmon Fillet (Divide into 4 - 5 oz. fillets)
- 1 cup Pecans
- 1/2 Garlic Cloves (Finely minced)
- 1/4 tsp Salt (optional)
- 1/8 tsp Cayenne Pepper
- 2 tbsps Extra Virgin Olive Oil
Pour pecans into a food processor and chop until fine.
Add garlic, salt, and cayenne pepper to food processor and continue processing until well mixed in. Pour mixture onto a plate.
Using a brush (or similar utensil), fully coat the salmon fillets with olive oil. Roll each fillet in the pecan mixture.
Heat a large non-stick fry pan and lightly saute the salmon on one side until browned. Turn and saute until salmon is cooked to your liking. Estimate about 5-6 minutes per side.
Remove salmon from pan and enjoy with your favorite veggie dish!
