Randi Karlinsky MS, RDN, LDN, CHC

  • 1 1/2 Cups Whole Wheat Flour
  • 1/2 Cup Oats
  • 1 tsp. Baking Soda
  • 1/2 tsp. Cinnamon
  • 1/2 Cup All Natural Peanut Butter
  • 1 tsp. Vanilla Extract
  • 2 Eggs
  • 1/4 Cup Maple Syrup
  • 2 Bananas
  • 1/4 Cup Unsweetened Almond Milk
  • 1 Cup Mini semi-sweet chocolate chips

  1. Preheat the oven to 350 degrees F and grease a 9x5-inch loaf pan.

  2. In a large bowl or standing mixer, combine the peanut butter, bananas, vanilla extract, and maple syrup. Add in the eggs and beat until ingredients are fully mixed.

  3. In a separate bowl, combine the flour, oats, baking soda, and cinnamon.

  4. Add the dry ingredients to the wet ingredients little by little, stirring constantly. Add the almond milk if the dough appears too dry. Once the dough is complete, fold in the chocolate chips.

  5. Pour batter into the loaf pan and bake for 35-40 minutes. Use a toothpick to determine when the banana bread is done.

  6. Once the bread is done cooking, set aside to cool.

  7. Enjoy!
