Balsamic Grilled Zucchini


Zucchini is not only low in calories, but is also a good source of vitamin C and dietary fiber. Try this simple grilled zucchini recipe - a perfect addition to any summer meal! 


  • 2 zucchinis, quartered lengthwise
  • 2 tsp olive oil
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 pinch of salt
  • 2 tbsp balsamic vinegar


  1. Preheat grill to medium-low heat and lightly oil the grate
  2. Brush zucchini with olive oil
  3. Sprinkle garlic powder, Italian seasoning, and salt on zucchini
  4. Cook on preheated grill until it begins to brown, 3-4 minutes per side
  5. Brush balsamic vinegar over zucchini and continue cooking for 1 minute - serve immediately
